This artisanal jam is made from selected, untreated citrons grown on the terraces of the Amalfi Coast. Compared to classic citrus fruits, the citron stands out for its thick, white, spongy rind — the albedo — which, thanks to skillful processing, loses all its bitterness to deliver a deep and aromatic sweetness.

The processing is completely manual: each fruit is cut by hand to preserve the integrity of the essential oils contained in the peel. Slow cooking results in a dense and precious consistency, rich in soft pieces that become naturally candied during the process, releasing a persistent and noble citrus scent.

Production follows nature's rhythm, focusing on the period of maximum fruit ripeness: it is only by respecting the seasonality that the citron can transfer its characteristic balance between sweet notes and a pleasantly fresh finish into the jar.
